Grilled Boneless Pork Chops with Lemon Butter


Ingredients:

4 Boneless Pork Chops – about 1 inch thick
1/2 Cup Butter
Juice of 2 Lemons
1/2 Teaspoon Salt
1/8 Teaspoon Pepper

Preparation:

Melt butter in a glass measuring cup for 1/2 to one minute in microwave. Add lemon juice, salt and pepper. Brush lemon juice mixture on top of the chops and let them sit at room temperature for about 15 minutes before grilling.

Heat grill to 600 degrees or maximum heat. Place pork chops directly on the grill. Allow the heat to sear the chops for about a minute, then turn the heat to medium or raise the grate. Grill 3 minutes more, turn over and brush the other side with lemon juice mixture. Grill another 4 minutes or until the pork is cooked through, reaching an internal temperature of 145 degrees.

Serve with a baked sweet potato and fresh corn from the produce department. Fresh berries complete a great meal.
