Eye of Round Beef Roast


Ingredients:

One 3 lb. Eye of Round Beef Roast
Salt & Pepper to Taste

Preparation:

Pre-heat the oven to 500 degrees. Season the roast with salt and pepper, then place it in a roasting pan or baking dish, fat side up. Do not cover or add water. Place the roast in the pre-heated oven and reduce the temperature to 475 degrees. Roast for 21 minutes (seven minutes per lb.) then turn the oven off and let the roast sit in the hot oven for 2 ½ hours. Do not open the oven door at all during this time. Remove the roast from the oven, the internal temperature of the roast should have reached at least 145 degrees. Carve into slices and serve with mashed potatoes and fresh broccoli from the produce department. Fresh sliced strawberries are the perfect dessert to a great dinner.
