Scalloped Potatoes & Ham Casserole
Ingredients:
6 tablespoons butter, divided1/4 cup all-purpose flour
1 teaspoon dried parsley flakes
1 teaspoon salt
1/2 teaspoon dried thyme
3 cups milk
6 cups thinly sliced and peeled potatoes
1 1/2 cups cubed ham
1 small onion, grated
Preparation:
Preheat oven to 375 degrees. In a large saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, parsley flakes, salt, thyme and pepper until smooth. Gradually add milk; bring to a boil. Cook and stir for 2 minutes. In a large bowl, combine potatoes, ham and onion; place half in a greased 2 1/2 quart baking dish. Top with half the sauce, then potato mixture and finally the remaining sauce. Cover and bake until potatoes are almost tender, 65-75 minutes. Dot with remaining 2 tablespoons butter. Bake, uncovered, until potatoes are tender, 15 to 20 minutes.Serve with your favorite salad from the produce department, and some grilled stickies from the bakery completes a hearty, tasty meal.
