Chicken Parmesan


Ingredients:

2 1/2 lbs. boneless, skinless chicken breasts
1/8 cup olive oil
1 large egg, beaten with 2 tablespoons water
1/3 cup breadcrumbs
1 1/2 cups shredded mozzarella cheese
1/4 cup grated Romano cheese
24oz. jar marinara sauce

Preparation:

Dip chicken breasts into beaten egg mixture, then coat with the breadcrumbs on each side. Press the breadcrumbs into the chicken. Brown chicken in a lightly oiled skillet for about 2 ½ minutes each side.

Pour a thin layer of marinara sauce on the bottom of a baking pan or casserole dish. Lay chicken on the marinara sauce. Sprinkle mozzarella cheese over the chicken. Spoon the rest of the marinara sauce over the chicken, covering completely. Sprinkle top with grated Romano cheese.

Bake uncovered in a pre-heated 350 degree oven for about 25 minutes or until sauce is bubbly and cheese is slightly brown.

Serve with side dish of pasta with marinara sauce.
