Broiled Salmon with Lemon Butter


Ingredients:

1 1/2 to 2 lbs. Fresh Salmon Fillets
1/2 Cup Butter
Juice of 2 Lemons
1/2 Teaspoon Salt
1/8 Teaspoon Pepper

Preparation:

Melt butter in a glass measuring cup for 30 to 60 seconds in microwave. Add lemon juice, salt and pepper to the butter.

Place salmon on top of broiling pan lined with aluminum foil skin side down. Brush lemon juice mixture on top of salmon. Broil 3 to 4 minutes, turn over and brush other side with lemon juice mixture. Broil another 3 to 4 minutes or until the salmon flakes easily with a fork.

Serve with a baked potato and fresh, steamed broccoli from the produce department. Fresh Holiday Grapes are a perfect ending to a wonderful meal.
